There aren’t many dishes better suited for a late summer meal than farro salad. Farro is a versatile, nutty grain with cashew notes and a satisfying crunch to it. It also has a rich history in culinary culture. Farro was found in the tombs of Egyptian kings and fed the Roman Legions. It’s been recently rediscovered as a versatile grain that can be used in salads, soups or as a side on its own. Let us save you the trouble. We use organic Farro prepared just the way King Tut liked it. We add fresh grilled zucchini, summer squash and White Lotus Farms sungold cherry tomatoes, and throw in some fresh kale. Then we toss everything in our housemade roasted tomato vinaigrette and top it with feta. Good for that’s good for you.
